Toddler Meals: Potato, Zucchini and Cheese Fritters


In an attempt to get my finicky daughter to eat more vegetables, I made up some fritters with zucchini and potatoes.  She loved them!  It's really yummy.  I ate 'em for lunch.  This was a great way to use the zucchini from our garden, and with the eggs it makes a really tasty breakfast, too.
Potato, Zucchini and Cheese Fritters

2 med potatoes, peeled
2 med zucchini, trimmed
1/2 c grated cheddar cheese
2 eggs, slightly beaten
Pinch of nutmeg
Salt & pepper to taste
2 T vegetable oil
2 T margarine

Coarsely grate the potatoes and zucchini then get rid of as much of their liquid as possible by squeezing them between two plates.  Put the vegetables in a bowl and add the grated cheese, eggs and seasonings.  Heat the oil and margarine in a pan.  Form the vegetable mixture into round, flat cakes and cook over medium heat, turning frequently to brown both sides.  Makes about 8 four-inch rounds.

Amy, I have been thinking about the comment you made on my blog about 'easy meal and no cooking.' I lied. I guess I don't BAKE in the summer, but I cook on the stovetop because my husband would never go for no cooking, nor would my kids. Well, my 8 year old wishes she could live on peanut butter and jelly, but I have other ideas. Anyway, i guess I cook, just not bake. But I am so ready to start baking again! It has cooled off here so much!

I'm afraid my children would be too suspicious of the "green stuff", they do like vegetables, but not when they are hidden in a mash of other things. :^) Oh well. Can't please everyone lol! Enjoy your blog! Take care and God bless!
